Since my weight loss surgery last year, I have changed many of my "bad" eating habits. Having the surgery gave me a jumpstart to feeling better, but it's also ALOT of work! My family adopted some of the healthier ways, but would not bend when it came to eating whole grain pasta and breads, sugar-free, low-carb foods, and yes.. veggies! A few of my kiddos are veggie eaters, but only a couple will eat raw vegetables and salad. And to get the hubby to eat salad or vegetables on a regular basis (he's the meat and potatoes kinda guy) was like pulling teeth!
That is until recently when the hubby developed a horrible infection in his hand and was admitted and scheduled for emergency surgery the next morning! They did everything to find the cause of the infection, and then I mentioned checking his blood sugar levels. I had been trying to get him to the doctor to be checked for diabetes for the longest time! You see.. I was diagnosed with Type II back before my surgery, so I knew the signs to look for. With my healthier eating, I am now off of the medications I took for diabetes, my blood pressure has regulated itself, and I no longer have sleep apnea.
Long story short — the hubby was diagnosed with diabetes and was put on a strict diet and insulin while in the hospital. He is now on oral medication, and has adapted (after a bit of a struggle lol) to the new food regimen. Not only that, but we have changed the way ALL of our household eats now. The kids have been learning to reach for a piece of fresh fruit or some crunchy veggie sticks when they're hungry instead of the sugary, high-carb foods they craved before.

Being that the hubby is a culinary school graduate, and I am the baker in the home, our children have always been comfortable in the kitchen.
