You know when you first go food shopping, and you get everything unpacked and put away .. then you start to think about what you want for lunch/dinner and can’t decide? Well, that’s what happened to me today. With so many choices available to me, I had to determine what I had a “taste” for at that very moment. Usually grocery shopping day means we will be having a “free for all” that night. The kids love it as they get to choose all their favorites.
By the time I sat down with my coffee and thought about what I wanted for lunch — it was almost dinner time. I finally decided on a nice salad with lots of protein and veggies, hence the Mediterranean Shrimp and Avocado Salad. I wasn’t planning to post this recipe today, so I didn’t take step-by-step photos, but as I’m sure you’ll agree, the finished product looks and was ”oh so appetizing!”


A healthy blend of salad shrimp, buttery avocado, crunchy veggies, and good-for-you fats. I used pre-cooked salad shrimp for this dish.
Ingredients
- 1 lb. cooked shrimp, peeled, deveined, chopped
- 2 avocado, diced
- 1/2 cup grape tomatoes, diced
- 1/4 cup black olives, diced
- 1/2 red onion, finely chopped
- 1 tsp extra virgin olive oil
- 1 lemon, juice of
- sea salt and fresh ground pepper to taste
- 2 tsp feta cheese
Directions
- In a small bowl, combine the red onion, olive oil, fresh lemon juice, salt and pepper. Allow them to marinate for 5-10 minutes to marry the flavors.
- In a large bowl, combine the cooked shrimp, avocado, tomatoes, black olives, and cilantro. Add the red onion mixture, and toss gently.
- Top your favorite salad greens with a heaping scoop of the shrimp and avocado mixture. Sprinkle with feta cheese and drizzle with red wine vinegar (optional). Serve with your favorite tortilla or pita chips.











This salad looks amazing! It is truly my kind of salad except I would add 6 tbsp of Feta
