I have an addiction … it's true! I'm totally addicted to recipes — AND Pinterest! That's also where I usually find my best recipes too. I make quite a few of the dishes I find on Pinterest, and so far.. they've all been yummy! So, I thought I would share some of my Pintastic Meals with you on occasion, and let you know if they were a Hit or Fail. These were all definitely HITS!
One of my very favorite food blogs, Iowa Girl Eats, features unique, easy-to-prepare meals – many of them very healthy and delicious. And her photos are TO-DIE-FOR! I seriously want her camera skills … and her camera would be great too!
I found this awesome recipe for a Key West Grilled Chicken Sandwich on her blog, and had to pin it for future use. I'm glad I did — made it for the family last night and it was a HIT! The youngest 3 weren't too enthused with the mango salsa, but they ate
shoveled the rest. Hubby and I, and our oldest daughter LOVED the combo of lime-infused mango, avocado, red onion, and jalapeno. DELISH!
Remember that GINORMOUS sweet potato my neighbor gave me last week? Well, I decided to make a recipe I found on Pinterest for Baked Sweet Potato Fries (my version shown above). The writer, Amy from She Wears Many Hats, was a guest blogger on the Tasty Kitchen Blog. These are SO easy to make.. and very tasty! I had some trouble chopping up the monstrous sweet potato, but other than that .. they're a quick, healthy alternative to regular french fries. No frying — just delectable, sweet goodness! I fed 6 people with only HALF of that sweet potato. 😉
With such a filling meal, I thought we should have a light, refreshing dessert to follow. Pinned these babies from The Sweets Life blog, Cheesecake Stuffed Strawberries! Can you say total YUM?! All the taste of rich, luscious cheesecake without all the fat and calories! In fact, I substituted the confectioner's sugar with Splenda and it was awesome! The kids are already asking when I'm making them again!
