Fiesta Rice Salad #LoveEveryMinute

We are big rice lovers – it’s a regular menu item in our home. Spanish rice, fried rice, rice and gravy… you name it, we love it. Although I can’t seem to get the family as excited about brown rice. I happen to enjoy the rich, nutty flavor myself, but haven’t been able to convert them over just yet.

I have to admit — it’s been years since I’ve tried Minute® Rice products. I can remember my mom cooking with it when I was growing up. We’ve always bought the regular, long-grain rice that takes much longer to cook, but I was curious as to how much of a difference their really is. As a mom of 5 that works full-time outside the home, I am always looking for foods that are not only delicious, but also convenient, easy to prepare, and that don’t cost a fortune.

My all-time favorite food is salad. I can eat it for breakfast, lunch, and dinner. And actually have on many occasions. So, I decided I would whip up a tasty, light rice salad using Minute® Rice brown rice. This salad is so colorful and gorgeous as you can see. It’s so pretty, it makes you WANT to eat it. And I figured if I added lots of the other goodies into it that my kids like, they may actually eat the brown rice and not notice. 😉

I was thrilled with the ease and amount of time it took to prepare the rice — just boil your water, stir in the dry rice, cover and simmer on low for 5 minutes. It was THAT simple! And the rice came out so fluffy with no sticking whatsoever. Why didn’t I try this years ago?!

I hope you try this recipe for Fiesta Rice Salad — it’s chock full of fiber-rich black eyed peas, sweet corn, buttery avocado, and crunchy veggies! The original recipe is made using black beans, but the hubby neglected to tell me that he used the can I was saving just for this salad. :) I also added in black olives and a few slices of hard boiled egg for some added flavor and extra protein.

Fiesta Rice Salad #LoveEveryMinute

A deliciously light salad made with healthy brown rice and crunchy veggies. Perfect for any meal.


  • 2 cups cooked brown rice (cooled)
  • 1 cup fresh or thawed frozen corn kernels
  • 1 can black eyed peas (drained and rinsed)
  • 2-4 mini bell peppers (red, orange, yellow)
  • 1 cup grape or cherry tomatoes, halved
  • 3 scallions, chopped
  • 1 avocado
  • 2-3 fresh limes, juice of
  • 3 tablespoons extra virgin olive oil
  • 1 can Rotel diced tomatoes and chilies
  • 1-2 tsp ground cumin
  • salt and pepper to taste
  • Optional ingredients to toss in - black olives, hard boiled egg, fresh cilantro


  1. Prepare Minute® Rice according to box instructions. Set aside and let cool thoroughly.
  2. In large bowl, combine corn kernels, black eyed peas, grape tomatoes, black olives, diced tomatoes and chiles, peppers, tomatoes, and scallions.
  3. In a smaller bowl, whisk together olive oil, lime juice, cumin, salt and pepper.
  4. Pour dressing mixture over large bowl ingredients. Add in cooled rice and cilantro and toss gently until combined.
  5. Just before serving, stir in the diced avocado, and garnish with hard boiled egg slices.

  5. I didn’t know they had minute rice brown rice. We’ll have to try it.

  6. My daughter loves rice so much that I can’t even serve it with her meals otherwise she won’t eat anything else! I myself went through a crazy phase when I was about 11 and I would pretty much only eat white rice with pads of butter and salt. The idea gags me now but it’s all I ate for an entire summer!

    • That’s funny! lol I ate alot of white rice with butter and salt too.. I try to limit it to brown rice whenever possible, but I do love leftover white rice with a couple fried eggs on top. 😉

    Minute rice is great and we use it all the time. My daughter went to the store and bought the brown minute rice and I like it even better then the white.
